Reuben Bowls

Reuben Bowls: Savory Sweet and Satisfying

I felt so healthy eating this reuben bowl, even though it has corned beef which isn’t the healthiest meat, but it does have a homemade thousand island dressing and the base of it is cabbage with some carrots. It also happens to be very filling and made in one skillet. Oh and it is ready in about 30 minutes. I wish we ate corned beef more than once a year and it was more readily available at the stores, cause this meal is so delicious!

Reuben Bowls

Ingredients:

Thousand Island Dressing

  • 1/4 cup mayonnaise
  • 2 tablespoons dill pickle relish
  • 4 teaspoons ketchup
  • 1 1/2 teaspoons horseradish
  • 1 teaspoon lemon juice
  • 1/2 teaspoon Worcestershire sauce
  • black pepper, to taste

Reuben Bowl

  • 1 tablespoon olive oil
  • 1/2 yellow onion, diced
  • 8 cups coleslaw mix (green cabbage and carrots)
  • black pepper, to taste
  • 3/4 pound sliced corned beef
  • 1 1/2 cups drained sauerkraut
  • 1 cup shredded Swiss cheese
  • 1/3 cup thinly sliced baby dill pickles
  • 1 green onions, sliced

Directions:

  1. In a small bowl, whisk together all of the dressing ingredients and set aside.
  2. In a large skillet, over medium-high heat, heat the oil. Add in the onions and cooke until softened, about 3 minutes.
  3. Add in the coleslaw mix and season with black pepper. Cook, stirring occasionally until the cabbage is tender crisp, about 5 minutes.
  4. Stir in the corned beef and sauerkraut and cook until warmed about 1 minute.
  5. Sprinkle the Swiss cheese on top, cover the skillet and cook until the cheese is melted and bubbly, about 2-3 minutes.
  6. Top with sliced pickles and green onions. Drizzle dressing on top.
Enjoy!!!

Notes: You can top the whole skillet with the pickles, green onions and dressing or top individual servings.
