 Crispy Chicken Fried Rice: Savory Sweet and Satisfying

I LOVE fried rice! That is the main reason I ever agree to going out for Chinese food, the fried rice. Add a little soy sauce and it is so delicious. Here are the different varieties of fried rice that I have made: 

I have to say when I searched this blog for fried rice recipes, I thought a would find one or two, not five. I was shocked to find 5, I guess it is time to remake some of these fried rice recipes that I have forgotten about.

Crispy Chicken Fried Rice: Savory Sweet and Satisfying

When making fried rice the typically rice to use is white, but I rarely use white rice and always use brown rice instead. For the chicken you have several options, you can use leftover fried chicken or you can bake some frozen crispy chicken. I have never made fried chicken and don't plan on starting, plus I never buy fried chicken, but I do buy crispy frozen chicken and that is what I used for this recipe. Mine happened to be panko crusted chicken, which I buy at Costco.

This newest version of fried rice is amazing! The crispy chicken adds a bit of crunch to the fried rice, making it so yummy!

Crispy Chicken Fried Rice

Ingredients:

  • 1 teaspoon olive oil
  • 1 cup diced yellow onion
  • 4 cups leftover rice
  • 5 tablespoons low sodium soy sauce
  • 3 tablespoons hot sauce
  • 2 dashes Worcestershire sauce
  • 1 1/2 cups diced cooked crispy chicken
  • 4 green onions, sliced (only green parts)

Directions:

  1. In a large wok or skillet, heat the oil over medium heat.
  2. Add in the yellow onions and cook until soft, stirring often about 5-8 minutes.
  3. Increase the heat to medium-high and add in the rice, soy sauce, hot sauce and Worcestershire sauce, stirring to mix.
  4. Add in the chicken and stir to combine.
  5. Spread the mixture into an even layer and press down into the pan. Allow to cook for 30-45 seconds or until a crust forms on the bottom of the rice. Repeat this process 2 more times.
  6. Sprinkle the green onions on top and serve.
