My family goes in spurts with certain foods. For example they were eating up tortillas like crazy, so I bought a bunch more and they stopped eating them as much. So, now I am left with a bunch of tortillas to use up. Hopefully all the recipes I try turn out just as delicious as this one.
Chicken, Bacon Ranch Quesadillas
Ingredients:
- 2 1/4 cups cooked shredded chicken
- 8 slices bacon, cooked and crumbled
- 4-6 tablespoons ranch dressing
- 2-4 tablespoons canned diced green chilies
- 2/3 cup shredded cheddar cheese
- 2/3 cup shredded Monterey jack cheese
- 2/3 cup shredded Colby cheese
- 8 flour tortillas (8-inches)
Directions:
- In a medium bowl, stir together the shredded chicken, crumbled bacon, ranch dressing and green chilies.
- In a large bowl, combine all 3 cheeses together.
- Place 4 tortillas down and sprinkle each one with 1/4 cup of cheese.
- Evenly divided the chicken mixture between the tortillas and spread out onto the cheese.
- Sprinkle the remaining cheese onto of the chicken, about 1/4 cup and place another tortilla on top.
- Heat a skillet over medium heat.
- Add a tortilla to the skillet and cook until the bottom is golden brown. Flip over and cook on the other side until golden brown and cheese is melted.
- Repeat cooking the other tortillas.

Notes:
For a spicier version, use canned diced jalapeƱos instead of diced chilies.
