Baked Key Lime Doughnuts: Savory Sweet and Satisfying

I'm sure I've said this before, I don't know how I couldn't have. I LOVE KEY LIME!!! Key lime pie, key lime cake, key lime overnight oats, key lime cheesecake, key lime pancakes, key lime snack mix, key lime ice cream, key lime smoothie, key lime muffins and now key lime doughnuts. If it can be flavored with key lime, I am going to try it. My obsession with key lime started over 25 years ago when I tried my first key lime pie and I was hooked. Now I make any and every key lime recipe.

Baked Key Lime Doughnuts: Savory Sweet and Satisfying

Baked doughnuts are so easy to make and the flavors seem endless. I keep finding more and more flavors I want to try. These latest doughnuts I've made are full of key lime flavor, there is no denying these are key lime doughnuts. The doughnuts themselves have key lime juice and zest in them and the glaze is flavored  with key lime juice, so much key lime flavor.

Baked Key Lime Doughnuts

Ingredients:

Key Lime Doughnuts

  • 1 cup all purpose flour
  • 1 teaspoon baking powder
  • 1/3 cup plain greek yogurt
  • 1/3 cup + 1 tablespoon granulated sugar
  • 2 tablespoons key lime juice
  • 1 teaspoon key lime zest
  • 2 tablespoons unsalted butter, melted and slightly cooled
  • 1 egg
  • 1 1/4 teaspoons teaspoons vanilla extract

Key Lime Glaze

  • 1 cup powdered sugar
  • 2-3 tablespoons key lime juice

Directions:

  1. Preheat the oven to 350º F. Spray 8 cavities between two doughnut pans with cooking spray.
  2. In a medium bowl, whisk together the flour and baking powder.
  3. In a large bowl, whisk together the Greek yogurt, sugar, key lime juice, key lime zest, melted butter, egg and vanilla extract until well combined.
  4. Add the dry ingredients to the wet and stir just until combined.
  5. Spoon or pipe the batter into the 8 prepared doughnut cavities.
  6. Bake for 9-10 minutes or until an inserted toothpick comes out clean.
  7. Remove the doughnut pans from the oven and allow the doughnuts to cool in the pan for 5 minutes. Transfer the doughnuts to a cooling rack and allow to cool completely.
  8. In a small bowl whisk together the powdered sugar and key limes juice until well combined. If the glaze is too thick add in a little more key lime juice, if the glaze is too thin add in a little more powdered sugar.
  9. Dip the tops of the doughnuts into the glaze and place back on the cooling rack and allow the glaze to set. If you have extra glaze you can dip the doughnuts again, if desired and to add more key lime flavor.

Notes:
If you can't find key limes, which I can never find, you can use bottled key lime juice and lime zest, which is what I did in this recipe.
