Quesadilla Tuna Melt: Savory Sweet and Satisfying

My youngest daughter loves it when dad makes tuna melts. In trying to find a way to use up some tortillas, I decided to use tortillas and make a quesadilla tuna melt.

When making these quesadillas the amounts listed are approximate. You can use more or less of the tuna salad and cheese, depending on your tastes.

I do not have a tuna salad recipe to share with you. I have always made it by taste and I use miracle whip, dill pickle relish, a little bit of mustard and sometimes hot sauce. So use your favorite tuna salad to make these quesadillas.

These quesadillas were a big hit. My youngest daughter really liked them, although she did say she prefers the ones dad makes with bread. Even though he cooked the quesadillas and I prepared them, the sandwich ones he makes are still her favorite. Once a daddy's girl, always a daddy's girl.

Quesadilla Tuna Melt

Ingredients:

  • 8 8-inch tortillas
  • 2 2/3 cups tuna salad
  • 1 1/3 cups shredded pepper jack cheese
  • 1 1/3 cups shredded cheddar cheese

Directions:

  1. Sprinkle 1/2 cup of pepper jack cheese on 4 tortillas, leaving a 1/2-inch border around the edges of the tortillas.
  2. Spread 2/3 cup tuna salad on top of the pepper jack cheese and then sprinkle 1/2 cup cheddar cheese on top. Place the remaining tortillas on top.
  3. Spray a large skillet with cooking spray and heat over medium heat.
  4. Carefully transfer a quesadilla into the skillet and cook until browned, gets crispy and the cheese on the bottom begins to melt, about 3-4 minutes.
  5. Carefully flip the quesadilla over and cook on the other side until browned, gets crispy and the cheese has melted, about 3-4 minutes.
  6. Remove the quesadilla from pan and place on a cutting board. Let rest for about 1 minute before cutting into 4 equal pieces.
  7. Repeat with the remaining quesadillas.

Notes:
When cutting a quesadilla, you want to use a sharp knife and place the knife on the quesadilla and press down going from tip of the knife to the back. Using a back and forth cutting motion will cause the filling to squish out of the quesadilla. You can also use a pizza cutter, not a pizza wheel, to cut the quesadillas.

I am not including nutritional info, because of the different ways to make tuna salad and I don't measure when I make mine.
