Nachos are a weakness of mine. I just can't say no to nachos and I can't say no to a new nacho recipe, especially one that is as yummy as this one.
Tortilla chips are topped with shredded chicken that is mixed with spicy buffalo sauce and ranch dressing to tame the spiciness a little bit. Then colby jack cheese is sprinkled on top and baked until melted and then topped with green onions.
Immediately after my first bite I started thinking about what other toppings would work well with these nachos. I am thinking next time I will add some diced tomatoes and black olives to the top of these nachos.
Buffalo Chicken Nachos
Ingredients:
- 1 tablespoon olive oil
- 1 pound boneless skinless chicken breasts
- black pepper, to taste
- 1/2 cup buffalo sauce
- 1/2 cup ranch dressing
- 10-15 ounces tortilla chips
- 1 1/2 cups shredded colby jack cheese
- 2-3 green onions, sliced
Directions:
- Preheat the oven to 400º F.
- In a large skillet, heat the olive oil over medium heat.
- Season both sides of the chicken with black pepper and add to the skillet. Cook for about 5-6 minutes per side or until the chicken is completely cooked. Remove the skillet from the heat and remove the chicken from the skillet. Shred the chicken and return to the skillet. Add in the buffalo sauce and ranch dressing, stirring until well mixed.
- On a baking sheet with sides, spread out the tortilla chips. Sprinkle about 1/2 cup of cheese on top, followed by the shredded chicken and then the remaining cheese.
- Bake for 5-7 minutes or until the cheese has melted.
- Top with green onions and serve immediately.
