These chorizo nachos are amazing! The spicy chorizo gave the nachos a little spicy kick, but not so much that my kids could not eat them. It just gave the nachos great flavor.
I didn't think any nachos could beat not other nacho recipe, but these just might.
Black Bean Chorizo Nachos
Ingredients:
- 1 pound ground chorizo
- 12-14 ounces tortilla chips
- 3/4 cup black beans, rinsed and drained
- 4 ounce can diced green chilies
- 3 tomatoes, diced
- 3 cups cheddar cheese
- 4 green onions, sliced
- sour cream
Directions:
- Preheat the oven to 325º F.
- In a saucepan, cook the chorizo until completely cooked and drained.
- Using a sheet pan with sides, place the tortilla chips down in an even layer.
- Sprinkle about 1 cup of cheese over the chips.
- Sprinkle the chorizo, black beans, green chilies, tomatoes and the white and light green part of the onions.
- Sprinkle the remaining cheese over top.
- Bake for 8-10 minutes or until the cheese is melted and nachos are warmed through.
- Top with the dark green part of the green onions and serve with sour cream.
Notes:
I used my pizza pan to bake these nachos.
You can put the tomatoes on before baking the nachos or after. You could also put some on before baking and save some for after baking.
