Buttermilk Pound Cake with Caramel Icing: Savory Sweet and Satisfying

This pound cake is nice and moist and topped with a delicious caramel icing. The pound cake and caramel icing pair so perfectly well together and make an amazingly delicious bundt cake.

Buttermilk Pound Cake with Caramel Icing

Ingredients:

Buttermilk Pound Cake

  • 1 cup unsalted butter, softened
  • 2 1/3 cups granulated sugar
  • 4 eggs
  • 1 1/2 tablespoons vanilla extract
  • 3 cups all purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1 cup buttermilk

Caramel Icing

  • 1/4 cup unsalted butter, cubed
  • 1/2 cup packed light brown sugar
  • 1/3 cup heavy whipping cream
  • 1 cup powdered sugar, sifted

Directions:

Buttermilk Pound Cake

  1. Preheat the oven to 325º F.
  2. Grease the inside of a 10 inch bundt pan well with butter or shortening. Add a small amount of flour to the bundt pan and move the pan around to coat in flour. Turn the pan upside down and tap out an excess flour.
  3. In a large bowl, using an electric mixer, cream the butter and sugar together until light and fluffy.
  4. Add in the eggs, one at a time, beating well after each addition. Beat in the vanilla.
  5. In medium bowl, whisk together the flour, baking powder and baking soda.
  6. Mix 1/3 of the flour mixture into the butter and sugar mixture. Add in half of the buttermilk and mix to combine. Add in another 1/3 of the flour mixture and mix well followed by the remaining buttermilk and then the remaining flour mixture, mixing after each addition. The batter will be very thick, so use a spatula to make sure everything is completely mixed.
  7. Transfer the mixture to the prepared bundt pan and gently smooth into an even layer.
  8. Bake for 60 minutes or until an inserted cake tester comes out clean.
  9. Let the cake cook for 15 minutes, then remove from the pan and place on a cooling rack and allow to cool completely.
  10. Once the cake is cool place it on a serving plate or platter.

Caramel Icing

  1. In a medium saucepan, add in the butter, brown sugar and cream. Place over medium heat and bring the mixture to a boil while stirring constantly.
  2. Once the mixture come to a full boil, remove from the heat and whisk in the powdered sugar.
  3. Allow the icing to sit for 10-15 minutes.
  4. Whisk the icing and then pour over the cake. Let the icing set before serving the cake.
