I saw a Facebook post from my favorite breakfast place showing peanut butter banana waffles. They looked so good I decided to recreate them at home. But then I got the idea to add a homemade strawberry jam as well.
These waffles are beyond delicious. The homemade jam is quick and easy to make and when paired with creamy peanut butter and bananas on top of waffles it makes for a very delicious breakfast.
You can use any waffle recipe that you want for these. You could even use frozen waffles if that is your preference. I used this Homemade Belgium Waffle recipe and the crispy outside and fluffy inside paired well with the toppings.
Peanut Butter, Banana and Jelly Waffles
Ingredients:
- 4 Belgium waffles
Strawberry Jam
- 8 ounces frozen strawberries, coarsely chopped
- 1/4 cup + 2 tablespoons granulated sugar
- 1 tablespoon lemon juice
Waffle Toppings
- 1/3 cup peanut putter
- sliced bananas
Directions:
- in a medium pot, add the strawberries, sugar and lemon juice.
- Heat over medium-low heat while stirring constantly until the sugar has dissolved.
- Increase the heat to medium-high and bring the mixture to a rolling boil.
- Stir often and mash the strawberries, while the mixture continue to boil, until the mixture thickens and the surface is completely covered in bubbles, about 10 minutes.
- Remove the jam from the heat and allow to cool slightly before topping the waffles.
- Place the peanut butter in a microwave safe bowl and heat for 30 seconds. Stir the peanut butter and continue to heat in 30 second intervals until smooth and can easily be drizzled over the waffles.
- Top each waffle with desired amount of bananas, strawberry jam and melted peanut butter.
Notes:
You can switch out the strawberries for other berries.
You can use fresh berries instead of frozen berries.
You can always use more peanut butter to suit your taste.
