Like with all my fish recipes, except for tuna fish, I did not eat the fish. I rely on my husbands and oldest daughters opinion of any fish recipe I make. They both loved this fish and wanted me to keep the recipe and make it again.
Italian Cheese Cod
Ingredients:
- 1/4 cup olive oil
- 4 fillets cod
- fresh ground black pepper, to taste
- 1/2 cup Italian shredded cheese
- 1/4 cup Italian bread crumbs
- 4 cloves garlic, minced
- 1 lemon, juiced and zested
Directions:
- Preheat the oven to 425º F.
- Coat a baking sheet with 2 tablespoons of olive oil.
- Season both sides of the cod with black pepper.
- In a shallow bowl combine the Italian cheese, bread crumbs, garlic and lemon zest.
- Working with 1 piece of fish at a time place it into the bread crumb mixture and press down lightly to coat, turn the fish over and coat the other side, pressing down lightly. Place the fish on the prepared baking sheet and repeat with the remaining fish.
- Drizzle the remaining olive oil and the lemon juice over top of the fish.
- Bake for 20 minutes or until the fish is golden and flakes easily.
