It took me a few tries to figure out how to keep the cheese from leaking out too much. But I finally figured out the "secret". It wasn't to freeze the cheese like I initially thought, but to cut the cheese into small cubes. The small cubes still give nice pockets of cheese and some will leak out creating the crispy cheese edges, my husband loves.
