Salsa Chicken Stuffed Shells: Savory Sweet and Satisfying

I have a love hate relationship with stuffed shells. I love eating them, but hate stuffing them. It’s not that it is hard to stuff the shells, it does take a little bit of time and your hands get all messy, but I just never feel like stuffing them. Thankfully most times my kids are willing to help stuff the shells.

These shells have a little Mexican flavor to them and are loaded with cheese. When serving the shells you can top them with any combination of sour cream, salsa and guacamole.

Salsa Chicken Stuffed Shells

Ingredients:

  • 24 jumbo pasta shells
  • 2 teaspoons minced garlic
  • 2 cups cooked shredded chicken
  • 8 ounces cream cheese
  • 15 ounces salsa
  • 15 ounces frozen corn, thawed
  • 15 ounce can black beans, drained and rinsed
  • black pepper, to taste
  • 1 cup shredded cheddar cheese
  • 1 cup shredded monterey jack cheese
  • sour cream
  • guacamole
  • salsa

Directions:

  1. Preheat the oven to 375º F.
  2. Add the pasta shells to a pot of boiling water and cook for 10 minutes. Drain the shells and place on a wire, leaving space between the shells so they do not stick together.
  3. In a large skillet, over medium heat, heat the garlic, chicken and cream cheese until the cheese is melted.
  4. Add in 1/2 cup salsa, corn and beans. Stir to combine and season with black pepper.
  5. Cover the bottom of a 9x13 inch baking dish with 1/2 cup salsa.
  6. Fill the shells with the chicken filling and place the shells into the baking dish.
  7. Spoon the remaining salsa over top of the shells and then sprinkle with both cheeses.
  8. Cover the baking dish with aluminum foil and bake for 20 minutes.
  9. Remove the aluminum foil and serve the shells.
  10. Top the shells with sour cream, guacamole and/or salsa if desired.
