No Bake Cereal Bars

No Bake Cereal Bars: Savory Sweet and Satisfying

These cereal bars are so delicious. I ate a few crumbs while cutting and packaging them and really wanted to eat a whole bar or two or three. However, the recipe made just enough for my girls to have as an after school snack for the week.

I think I need to adjust the recipe to make a bigger batch and use my 9x13 inch baking dish, so that way I can have some of the bars as well as my kids.

No Bake Cereal Bars

Ingredients:

  • 1/4 cup unsalted butter, cut into tablespoon size pieces
  • 1/4 cup honey
  • 1/4 cup light brown sugar, packed
  • 1 tablespoon vanilla extract
  • 3 cups Multigrain Cherrios
  • 1 cup dried cranberries
  • 1/2 cup chocolate chips

Directions:

  1. Line an 8 inch square pan with aluminum foil. Lightly spray the foil with cooking spray and set aside.
  2. In a large bowl add the butter, honey and brown sugar. Microwave for 1 minute and then stir well. The mixture will look grainy.
  3. Return the bowl to the microwave and heat for 1 minute and then stir well.
  4. Again, return the bowl to the microwave and heat for 1 minute. Carefully remove the bowl from the microwave, it will be very hot and bubbly and stir.
  5. Carefully add in the vanilla, as it will bubble up, and stir.
  6. Stir in the cereal and dried fruit.
  7. Quickly stir in the chocolate chips, they will start to melt.
  8. Transfer the mixture to the prepared pan and firmly press down, using the bottom of a measuring cup sprayed with cooking spray, packing the mixture down.
  9. Cover the pan with aluminum foil and refrigerate for 2-3 hours or until the bars are firm.
  10. Remove the bars from the pan using the foil as a handle to lift them out. Cut into bars.
  11. Store the bars in an airtight container in the refrigerate.

Notes:
Instead of dried cranberries you could use raisins or other dried fruit of your choice.

You can use any type of chocolate chips, like white, peanut butter, butterscotch or what ever flavor you would like. This time I used butterscotch chips.
