Mmmm, mousse with coffee is oh so very delicious! A light and fluffy mousse with chocolate and coffee flavor is the best way to end a day. I really wish I had more of this mousse right now.
Mocha Mousse
Ingredients:
- 2 tablespoons cold water
- 2 teaspoons (1/4 ounce packet) unflavored gelatin
- 1/2 cup strong brewed hot coffee
- 1 1/2 cups heavy whipping cream
- 2/3 cup powdered sugar
- 3 tablespoons unsweetened cocoa powder
- 1 teaspoon vanilla extract
Directions:
- In a small bowl add the water.
- Sprinkle the gelatin over top of the water and then stir to combine. Set aside for 1 minute, allowing the gelatin to absorb the water.
- Pour the hot coffee into the gelatin and stir until the gelatin has completely dissolved. Set aside to cool.
- In a large bowl, beat the heavy cream on medium-high speed until soft peaks form.
- Add in the powdered sugar, cocoa powder and vanilla extract. Beat on low speed just until combined.
- With mixer on low speed, while beating slowly pour the cooled coffee gelatin mixture.
- Return mixture to medium-high speed and beat until well blended and soft peaks form. Do not over mix as the mixture will firm up more as it chills.
- If desired spoon or pipe the mixture into individual serving glasses or bowl.
- Chill at least 30 minutes before serving.
