Ham and White Cheddar Beer Cheese Soup: Savory Sweet and Satisfying

This soup is for those that love beer and cheese. I used a wheat beer and it gave the soup the perfect amount of beer flavor that complimented the cheese perfectly. The ham adds more flavor to an already creamy and flavorful soup.

Ham and White Cheddar Beer Cheese Soup

Ingredients:

  • 4 tablespoons unsalted butter
  • 1 small yellow onion, diced
  • 2 garlic cloves, minced
  • 1/2 cup all purpose flour
  • 1/2 teaspoon black pepper
  • 3/4 teaspoon dry mustard
  • 1 bottle wheat beer
  • 2 cups low sodium chicken broth
  • 2 cups half and half
  • 2 cups diced ham
  • 6 ounces sharp white cheddar cheese
  • 6 ounces sharp cheddar cheese
  • 2 teaspoons Worcestershire

Directions:

  1. In a large pot, over medium heat, melt the butter.
  2. Once the butter has completely melted add in the onion and sauté for 5 minutes or until softened and slightly golden.
  3. Add in the garlic and cook, stirring constantly for 1 minute.
  4. Whisk in the flour, black pepper and dry mustard. Cook stirring constantly for 3-4 minutes or until the flour is golden in color.
  5. Pour in the beer and stir constantly until the mixture has slightly thickened, about 2 minutes.
  6. Add in the chicken stock and half and half while stirring. Bring the mixture to a boil and then reduce the heat to a simmer. Simmer for 5- 10 minutes or until the soup has thickened, stirring often.
  7. Add in the ham and stir to mix.
  8. Reduce the heat to low and add in both cheeses and Worcestershire sauce, stirring until the cheese is completely melted and ham is warm.
