Crock Pot Baked Potato Casserole: Savory Sweet and Satisfying

The only potato crock pot recipes I have is for mashed potatoes. So I was happy to have another recipe for potatoes that is made in the crock pot. These potatoes are loaded with cheese and bacon for a delicious side dish.

Crock Pot Baked Potato Casserole

Ingredients:

  • 2 1/4 pounds russet potatoes, thinly sliced
  • 1 small yellow onion, diced
  • 1/2 pound bacon, cooked and crumbled
  • 12 ounces shredded cheddar cheese
  • 2 cloves garlic, minced
  • 4 tablespoons unsalted butter, melted

For Serving (not included in the nutritional info):

  • sour cream

Directions:

  1. Spray the inside of a crock pot with cooking spray.
  2. Place the potatoes slices into the crock pot and top with the onion, bacon and 8 ounces of the cheese. Gently stir to combine everything together.
  3. In small bowl combine the garlic and butter. Drizzle over top of the potatoes.
  4. Cover the crock pot and cook on low heat for 4 hours or until the potatoes are tender.
  5. Just before serving, top the potatoes with the remaining shredded cheese and let melt.
  6. Top each serving with sour cream, if desired.

Notes:
The thinner the potatoes are sliced the faster they will cook.
