Taco Rice with Queso


The star of this dish is the queso sauce. It really takes the dish from good to great. Without the queso sauce on top, I probably would not blog this recipe. But with the creamy white queso sauce, it makes the dish so much better.

When I went to make this recipe I only had about 2 1/2 cups of chicken broth in the fridge, So instead of opening another container, I used the remaining 1 cup of beef broth I had leftover in the fridge. This way I used up two containers of broth and did not have to find another recipe to use up leftover broth.

Taco Rice with Queso

Ingredients:

Taco Rice

  • 1 pound ground turkey
  • 1 small yellow onion, diced
  • black pepper, to taste
  • 1 1/2 cups brown rice
  • 1 packet taco seasoning
  • 1/2 teaspoon garlic powder
  • 3 1/2 cups low sodium chicken broth

Queso Sauce

  • 8 ounces pepper jack cheese
  • 4 ounces cream cheese
  • 1/3 cup half and half

Directions:

Taco Rice

  1. In a large skillet, over medium high heat add the ground turkey and onions. Season with black pepper and cook until the meat is completely cooked and crumbled.
  2. Reduce the heat to medium and add in the rice, taco seasoning and garlic powder. Stir to combine.
  3. Pour in the chicken broth and stir to mix. Bring the mixture to a boil and reduce the heat to low.
  4. Cover the skillet and cook on low heat for 40-45 minutes or until the rice is tender and all of the liquid has been absorbed, stirring every 10-15 minutes. Do not stir during the last 10 minutes of cooking time.

Queso Saue

  1. In a medium pot add the pepper jack cheese, cream cheese and half and half.
  2. Heat the mixture over low heat, stirring occasionally, until both cheeses are completely melted and the mixture is smooth.
  3. Serve the queso over the rice.

Notes:
I used my Homemade Taco Seasoning in this recipe.

This queso sauce makes enough to drizzle on top of the rice with some leftover to add more to each serving. Depending on how much your family likes queso, you can double the recipe to give plenty of extra to add to each serving,
