Oh my goodness! These pancakes are amazing! They are nice and fluffy with a creamy sweetness to them. I have a feeling I will be making these often, especially when I have extra ricotta cheese on hand.
Sweet Cream Ricotta Pancakes
Ingredients:
- 1 cup ricotta cheese
- 3/4 cup buttermilk
- 2 eggs
- 1 teaspoon vanilla extract
- 1 cup all purpose flour
- 4 tablespoons granulated sugar
- 1 teaspoon baking powder
- butter
Directions:
- In a large bowl, stir together the ricotta cheese, buttermilk, eggs and vanilla extract until well mixed.
- Gently fold in the flour, sugar and baking powder, just until combined.
- Heat a griddle or skillet over medium heat.
- Melt a pat of butter on the griddle or skillet.
- Pour 1/3 cup batter onto the griddle or skillet and cook until golden brown on the bottom.
- Flip the pancake over and cook until golden brown on the other side.

Makes about 6 pancakes.
