Sweet Cream Ricotta Pancakes: Savory Sweet and Satisfying

Oh my goodness! These pancakes are amazing! They are nice and fluffy with a creamy sweetness to them. I have a feeling I will be making these often, especially when I have extra ricotta cheese on hand.

Sweet Cream Ricotta Pancakes

Ingredients:

  • 1 cup ricotta cheese
  • 3/4 cup buttermilk
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 cup all purpose flour
  • 4 tablespoons granulated sugar
  • 1 teaspoon baking powder
  • butter

Directions:

  1. In a large bowl, stir together the ricotta cheese, buttermilk, eggs and vanilla extract until well mixed.
  2. Gently fold in the flour, sugar and baking powder, just until combined.
  3. Heat a griddle or skillet over medium heat.
  4. Melt a pat of butter on the griddle or skillet.
  5. Pour 1/3 cup batter onto the griddle or skillet and cook until golden brown on the bottom.
  6. Flip the pancake over and cook until golden brown on the other side.

Makes about 6 pancakes.
