One skillet, around 30 minutes and this taco inspired pasta will be ready to enjoy!
My family was split on this recipe, two loved it and two did not care for it. Normally that would lead me to not keep or post the recipe, but I loved it and more importantly, I loved how easy it was to prepare.
One Pot Cheesy Taco Pasta
Ingredients:
- 1 pound ground turkey
- pinch black pepper
- 1 packet taco seasoning
- 2 cups water
- 1 cup salsa
- 8 ounces rotini pasta, uncooked
- 3/4 cup shredded colby jack cheese
- 3/4 cup shredded cheddar cheese
- crushed tortilla chips
Directions:
- In a large deep skillet, add the ground turkey and season with black pepper.
- Cook over medium heat, breaking it up as it cooks, until it is completely cooked. Drain if needed.
- Add in the taco seasoning, water, salsa and pasta, stirring to combine.
- Bring the mixture to a boil.
- Stir the mixture, cover the skillet and reduce the heat to a simmer.
- Simmer for 15 minutes or until the pasta is tender and the majority of the liquid is gone.
- Turn off the heat and stir in both cheeses.
- Serve with crushed tortilla chips.
Notes:
I used my Homemade Taco Seasoning.
You could add additional toppings, like diced tomatoes and sour cream.
