Banana muffin batter and dark chocolate banana muffin batter are swirled together to create a delicious breakfast treat.
Dark Chocolate Banana Marble Muffins
Ingredients:
- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 1 egg
- 1/4 cup greek yogurt
- 1 1/2 cups mashed ripe bananas
- 1 teaspoon vanilla extract
- 2 1/4 cups all purpose flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1 teaspoon ground cinnamon
- 1/2 cup dark cocoa powder
- 1/2 cup + 2 tablespoons mini chocolate chips
Directions:
- Preheat the oven to 350º F. Spray 18 spots in two muffin tins with cooking spray or place 18 liners in the two muffin tins.
- In a large bowl, beat the butter and granulated sugar until creamy.
- Add in the egg, yogurt, mashed banana and vanilla. Beat to mix well.
- In a large bowl, whisk together the flour, baking powder, baking soda and cinnamon.
- Slowly beat the dry ingredients into the butter mixture. Do not over mix.
- Place half of the batter into another bowl, about 2 cups.
- In one of the bowls, stir in the cocoa powder and 1/2 cup mini chocolate chips.
- Spoon the chocolate batter evenly into the sides of the prepared muffin tins. The batter is thick so it will stay on the side of the tins.
- Spoon the regular batter into the other side of the muffin tin.
- Use a toothpick and gently swirl the two batters together a little bit.
- Sprinkle the remaining mini chocolate chips on top of the muffins.
- Bake for 17-18 minutes, or until an inserted toothpick comes out clean. Do not over bake.
- Remove the muffins from the tins and cool slightly before serving.
