Chicken Scallopini

Chicken Scallopini: Savory Sweet and Satisfying

Crispy breaded chicken is placed on top of pasta tossed in a lemon butter sauce. This creates the most delicious meal.

If you are not familiar with the term scallopini, like I wasn't before I made this dish, it basically means a thinly sliced cut of meat that is dredge in flour, usually whole wheat, and quickly sautéed in a reduction sauce. This version of scallopini uses breadcrumbs that make the chicken nice and crispy.

Chicken Scallopini

Ingredients:

  • 8 ounces linguini pasta
  • 2 boneless skinless chicken breasts
  • 1 tablespoon canola oil
  • 2 tablespoons unsalted butter
  • 1/4 teaspoon black pepper
  • 1 1/2 cups Italian seasoned breadcrumbs
  • 2 ounces fresh lemon juice
  • 2 tablespoons white wine
  • 1/4 cup heavy whipping cream
  • 1/2 cup unsalted butter

Directions:

  1. Cook the pasta according to the package directions and drain.
  2. Slice the chicken breasts in half horizontally, making four thin chicken breasts.
  3. Heat the canola oil and 2 tablespoons of butter over medium-high heat in a large skillet.
  4. In a shallow bowl combine the black pepper and breadcrumbs.
  5. Coat both sides of the chicken breasts in breadcrumbs, pressing down to make sure the breadcrumbs stick.
  6. Place the chicken breasts into the hot skillet and cook until golden brown, about 3 minutes. Flip the chicken breasts over and cook until the other side is golden brown and chicken is completely cooked, about 2-3 minutes.
  7. Remove the chicken from the pan and keep warm.
  8. While the chicken is cooking, in a medium pot, heat the lemon juice and white wine over medium heat and bring to a boil.
  9. Reduce the heat to medium-low and add in the heavy cream. Simmer until the mixture thickens.
  10. Add the butter in 2 tablespoons at a time, stirring after each addition until well incorporated.
  11. Add the pasta to the lemon butter sauce and toss to combine. Season with black pepper.
  12. Serve the chicken over the pasta.

Notes:
You may need more breadcrumbs depending on the size of your chicken breasts.
