Crispy breaded chicken is placed on top of pasta tossed in a lemon butter sauce. This creates the most delicious meal.
If you are not familiar with the term scallopini, like I wasn't before I made this dish, it basically means a thinly sliced cut of meat that is dredge in flour, usually whole wheat, and quickly sautéed in a reduction sauce. This version of scallopini uses breadcrumbs that make the chicken nice and crispy.
Chicken Scallopini
Ingredients:
- 8 ounces linguini pasta
- 2 boneless skinless chicken breasts
- 1 tablespoon canola oil
- 2 tablespoons unsalted butter
- 1/4 teaspoon black pepper
- 1 1/2 cups Italian seasoned breadcrumbs
- 2 ounces fresh lemon juice
- 2 tablespoons white wine
- 1/4 cup heavy whipping cream
- 1/2 cup unsalted butter
Directions:
- Cook the pasta according to the package directions and drain.
- Slice the chicken breasts in half horizontally, making four thin chicken breasts.
- Heat the canola oil and 2 tablespoons of butter over medium-high heat in a large skillet.
- In a shallow bowl combine the black pepper and breadcrumbs.
- Coat both sides of the chicken breasts in breadcrumbs, pressing down to make sure the breadcrumbs stick.
- Place the chicken breasts into the hot skillet and cook until golden brown, about 3 minutes. Flip the chicken breasts over and cook until the other side is golden brown and chicken is completely cooked, about 2-3 minutes.
- Remove the chicken from the pan and keep warm.
- While the chicken is cooking, in a medium pot, heat the lemon juice and white wine over medium heat and bring to a boil.
- Reduce the heat to medium-low and add in the heavy cream. Simmer until the mixture thickens.
- Add the butter in 2 tablespoons at a time, stirring after each addition until well incorporated.
- Add the pasta to the lemon butter sauce and toss to combine. Season with black pepper.
- Serve the chicken over the pasta.
Notes:
You may need more breadcrumbs depending on the size of your chicken breasts.
