One Pan Balsamic Chicken and Veggies: Savory Sweet and Satisfying

This dinner was absolutely delicious and it also reheated well making the leftovers just as good as the first time we had it. Plus it is ready in less than 30 minutes and cooks all in one pan. I don't think this meal can get any better. 

One Pan Balsamic Chicken and Veggies: Savory Sweet and Satisfying

One Pan Balsamic Chicken and Veggies

Ingredients:

  • 1/4 cup + 2 tablespoons light Italian dressing
  • 3 tablespoons balsamic vinegar
  • 1 1/2 tablespoons honey
  • 1/8 teaspoon red pepper flakes
  • 1 1/4 pounds boneless skinless chicken breasts
  • 2 tablespoon olive oil
  • black pepper, to taste
  • 1 pound green beans
  • 1 pint grape tomatoes, halved

Directions:

  1. In a large mixing bowl, whisk together the salad dressing, balsamic vinegar, honey and red pepper flakes. Set aside.
  2. In a large skillet, heat the olive oil over medium-high heat.
  3. Season the chicken with black pepper and place in the skillet. Cook for about 5-7 minutes, then flip the chicken over and continue to cook until the chicken is completely cooked, about another 5-7 minutes.
  4. Add half of the dressing mixture to the skillet and move chicken around and flip over to evenly coat in the dressing. Transfer the chicken to a plate and keep warm.
  5. Add the green beans to the skillet and season with black pepper. Cook, stirring often, until they are tender crisp, about 4-6 minutes. Transfer the green beans to the plate with the chicken.
  6. Add the remaining dressing mix to the skillet and cook stirring constantly, until thickened, about 1 minute.
  7. Add the tomatoes to the plate with the chicken and green beans and drizzle the thickened dressing over top.
  8. Alternatively, you can drizzle individual servings with the thickened dressing.
