BLT Quesadilla

BLT Quesadilla: Savory Sweet and Satisfying

BLT's are a favorite summer sandwich for our family. There is something so delicious about such a simple sandwich. But of course I had to take a family favorite sandwich and change it up a bit. Enter the BLT Quesadilla, a combination of a cheese quesadilla and a BLT. Bacon and pepper jack cheese are inside of the quesadilla and then after being cooked the quesadilla is topped with chopped lettuce and tomatoes and then drizzled with a sour cream sauce. 

BLT Quesadilla

Ingredients:

  • 12 slices bacon
  • 12 ounces pepper jack cheese
  • 8 flour tortillas
  • 2 large tomatoes, diced
  • 2 cups chopped romaine lettuce
  • 1/2 cup light sour cream
  • 1 lime, juiced
  • black pepper, to taste

Directions:

  1. Combine the diced tomatoes and chopped lettuce in a large bowl and season with black pepper. Set aside.
  2. In a small bowl, combine the sour cream and lime juice. Set aside.
  3. In a skillet large enough to hold a tortilla, cook the bacon over medium low heat until crispy. Remove the bacon and set aside. Remove the bacon grease and wipe out the skillet.
  4. Heat skillet over medium heat and add 1 tortilla.
  5. Place 1/4 of the cheese, a slightly heaping 1/4 cup, on top of the tortilla.
  6. Crumble 3 slices of bacon on top of the cheese and then place another tortilla on top.
  7. Cook for 3-4 minutes or until bottom tortilla is lightly browned and crispy. Carefully flip the tortilla over and cook on the other side for 3-4 minutes, until the cheese is melted and bottom tortilla is lightly brown and crispy.
  8. Repeat with the remaining tortillas.
  9. Top each quesadilla with some of the lettuce and tomato mixture and a drizzle of sour cream mixture.

Notes:
You can cook the quesadillas in some of the bacon grease or in olive oil, about 1 teaspoon, if desired.

I used turkey bacon.
