Cajun Chicken Alfredo

Cajun Chicken Alfredo: Savory Sweet and Satisfying

My family loves Fettuccine Alfredo, so anytime I see a recipe seeing Alfredo sauce I give it a look. This recipe takes homemade Alfredo sauce and adds broccoli with penne pasta and chicken seasoned with cajun seasoning. 

Cajun Chicken Alfredo

Ingredients:

  • 1/2 tablespoon garlic powder
  • 1/2 tablespoon Italian seasoning
  • 1/2 tablespoon paprika
  • 3/4 teaspoon black pepper
  • 3/4 teaspoon cayenne pepper
  • 3/4 teaspoon dried thyme
  • 3/4 teaspoon onion powder
  • 1 pound penne pasta
  • 2 cups broccoli florets
  • 1 pound boneless skinless chicken breasts
  • 2 tablespoons olive oil
  • 2 tablespoons unsalted butter
  • 3 cloves garlic, minced
  • 1/2 cup dry white wine
  • 2 cups heavy cream
  • 8 ounces shredded Parmesan cheese
  • black pepper, to taste

Directions:

  1. In a small bowl combine the garlic powder, Italian seasoning, paprika, black pepper, cayenne pepper, dried thyme and onion powder. Set aside.
  2. Cook the pasta according to the package directions adding the broccoli during the last 2 minutes of cooking time. Drain the pasta and broccoli.
  3. Meanwhile, if the chicken breasts are thick, cut them in half lengthwise to make them thinner.
  4. Season both sides of the chicken breasts with the seasoning mix.
  5. In a large skillet, over medium-high heat, heat the oil. Add in the chicken breasts and cook until browned, about 5 minutes. Flip the chicken breasts over and cook on the other side until browned and completely cooked, about 5 minutes.
  6. Remove the chicken breasts and keep warm.
  7. If you want the Alfredo sauce to be white clean out the skillet, if you want the flavor from the browned chicken bits in the sauce, do not clean out the skillet, but the sauce will a light brown color.
  8. Over medium-high heat melt the butter. Add in the garlic and cook until fragrant, about 30 seconds.
  9. Whisk in the wine and simmer until the sauce has reduced by half, about 2 minutes.
  10. Whisk in the cream and simmer until slightly thickened, about 2 minutes. Stir in the parmesan cheese and season with black pepper.
  11. Add the pasta and broccoli to the Alfredo sauce and gently stir to mix.
  12. Slice the chicken and place on top of the pasta. Top with more parmesan cheese if desired.
