Mexicali Chicken Nachos

Mexicali Chicken Nachos: Savory Sweet and Satisfying

I already have a nacho recipe that my family loves, but this one is fairly different, so I had to try it. How could I not with my love of nachos! 

The chicken is what really makes these nachos stand out. It is seasoned with a homemade Mexicali seasonings, which adds such great flavor to the nachos. As with any nachos, you can customize them to your liking adding the toppings you prefer.

Mexicali Chicken Nachos

Ingredients:

  • 1 1/4 pounds boneless skinless chicken breasts
  • 4 teaspoons olive oil, divided
  • 1/2 large lime, juiced
  • 1/2 tablespoon dried cilantro
  • 1/2 tablespoon chili powder
  • 3/4 teaspoon ground cumin
  • 1/2 teaspoon chipotle powder
  • 1/2 teaspoon paprika
  • 1/4 teaspoon dried oregano
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 13 ounces tortilla chips
  • 8 ounces shredded cheddar jack cheese
  • 1/2 red bell pepper, finely diced
  • 1/4-1/3 cup finely diced red onion
  • 1/2 orange bell pepper, finely diced
  • 1-2 roma tomato, diced
  • pickled jalapeños
  • sour cream

Directions:

  1. In a shallow bowl, stir together 2 teaspoons olive oil, lime juice and all of the seasonings. Add in the chicken and turn to coat well in the seasoning. Set aside.
  2. In a non-stick skillet heat the remaining 2 teaspoons olive oil over medium-high heat.
  3. Add in the chicken and cook for 5-8 minutes, turn and cook on the other side for 5-8 minutes or until the chicken is completely cooked.
  4. Transfer the chicken to a cutting board and allow to rest for a few minutes.
  5. Preheat oven to 325º F.
  6. Shred the chicken and then add it back to the skillet. Stir it around to pick up the remaining seasoning left in the skillet.
  7. Spread the chips on a 1/4 sheet pan, about 9x13 inches.
  8. Sprinkle 1/2 cup of the cheese over the chips.
  9. Top with both diced peppers, diced onions and shredded chicken.
  10. Sprinkle with the remaining cheese.
  11. Baked for 10-15 minutes or until the cheese is melted.
  12. Top with diced tomatoes, pickled jalapeños and sour cream or toppings of your choice.
