English Muffin Breakfast

English Muffin Breakfast Pizza: Savory Sweet and Satisfying

English muffins are topped with a homemade sawmill gravy, scrambled eggs, sausage and cheese. This makes a filling and satisfying breakfast.

English Muffin Breakfast

Ingredients:

  • 6 english muffins, split in half
  • 1 pound breakfast sausage
  • 1/4 cup sausage drippings
  • 1/4 cup flour
  • 2 cups milk
  • 1/4 teaspoon black pepper
  • 8 eggs
  • 12 slices cheddar cheese

Directions:

  1. In a non-stick skillet cook the sausage until crumbled and completely cooked.
  2. Transfer the sausage to a plate lined with paper towel.
  3. Leave 1/4 cup of sausage drippings in the pan. Add some butter if you do not have 1/4 cup of drippings.
  4. Over medium heat, whisk the flour into the sausage drippings. Cook and whisk for 5-10 minutes or until the mixture starts to turn golden brown.
  5. Slowly whisk in the milk and whisk constantly until the mixture comes to a boil and thickens. Season with black pepper.
  6. Remove the gravy from the heat and set aside.
  7. While making the gravy, lightly toast the english muffins.
  8. In a large bowl, whisk the eggs together with a little splash of milk.
  9. Heat a non-stick skillet over medium heat.
  10. Pour the eggs into the heated skillet and cook stirring often, until the eggs are scrambled.
  11. Turn the oven broiler onto high.
  12. Place the toasted english muffin halves on a baking sheet.
  13. Spread desired amount of gravy on the english muffins.
  14. Place the scrambled eggs on top of the gravy followed by the crumbled sausage.
  15. Top the english muffins with a slice of cheese.
  16. Place the baking sheet under the broiler until the cheese has melted and everything is warmed through.
