While we lived in Chicago, there was a winery that had this most delicious chicken on their menu, Chicken Giardiniera. It was a thinly sliced breaded chicken breast topped with giardiniera peppers.
While trying to come up with ideas to use the giant jar of giardiniera peppers in my fridge I remembered that most delicious chicken breast and decided to recreate it.
I am so glad that I decided to recreate that chicken, it was delicious! Crunchy chicken breast topped with giardiniera peppers and then baked to perfection.
Chicken Giardiniera
Ingredients:
- 2 boneless skinless chicken breasts
- 1 cup buttermilk
- 3/4 cup grated parmesan cheese
- 3/4 cup panko breadcrumbs
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon paprika
- 1/4 teaspoon cayenne pepper
- 1/4- 1/2 cup giardiniera peppers
Directions:
- Slice the chicken breast in half horizontally making 4 thin chicken breasts.
- In a medium container or sealable bag, add the chicken breasts and buttermilk, coating the chicken breasts in the buttermilk.
- Seal the container or bag and refrigerate for at least 4 hours.
- Preheat the oven to 350º F. Place a cooling rack on a baking sheet and spray with cooking spray.
- In a shallow bowl combine the parmesan cheese, panko, garlic powder, onion powder, paprika and cayenne pepper.
- Working with one piece at a time, remove the chicken from the buttermilk and place into the panko mixture.
- Coat both sides of the chicken breasts with the panko mixture, pressing down to make sure it sticks.
- Place the chicken breasts onto the prepared cooking rack.
- If the giardiniera peppers are in big pieces, roughly chop.
- Spread 1-2 tablespoons of giardiniera peppers on each chicken breast.
- Bake for 20-30 minutes, or until the chicken is completely cooked.
