Chicken Giardiniera

Chicken Giardiniera: Savory Sweet and Satisfying

While we lived in Chicago, there was a winery that had this most delicious chicken on their menu, Chicken Giardiniera. It was a thinly sliced breaded chicken breast topped with giardiniera peppers. 

While trying to come up with ideas to use the giant jar of giardiniera peppers in my fridge I remembered that most delicious chicken breast and decided to recreate it. 

I am so glad that I decided to recreate that chicken, it was delicious! Crunchy chicken breast topped with giardiniera peppers and then baked to perfection.

Chicken Giardiniera

Ingredients:

  • 2 boneless skinless chicken breasts
  • 1 cup buttermilk
  • 3/4 cup grated parmesan cheese
  • 3/4 cup panko breadcrumbs
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • 1/4 teaspoon cayenne pepper
  • 1/4- 1/2 cup giardiniera peppers

Directions:

  1. Slice the chicken breast in half horizontally making 4 thin chicken breasts.
  2. In a medium container or sealable bag, add the chicken breasts and buttermilk, coating the chicken breasts in the buttermilk.
  3. Seal the container or bag and refrigerate for at least 4 hours.
  4. Preheat the oven to 350º F. Place a cooling rack on a baking sheet and spray with cooking spray.
  5. In a shallow bowl combine the parmesan cheese, panko, garlic powder, onion powder, paprika and cayenne pepper.
  6. Working with one piece at a time, remove the chicken from the buttermilk and place into the panko mixture.
  7. Coat both sides of the chicken breasts with the panko mixture, pressing down to make sure it sticks.
  8. Place the chicken breasts onto the prepared cooking rack.
  9. If the giardiniera peppers are in big pieces, roughly chop.
  10. Spread 1-2 tablespoons of giardiniera peppers on each chicken breast.
  11. Bake for 20-30 minutes, or until the chicken is completely cooked.
