Homemade Broccoli Au Gratin Rice-a-Roni: Savory Sweet and Satisfying

Back in the day I used to love Rice-a-Roni. I enjoyed trying all of the different flavors. Also it was a quick and easy side dish.

Since I have been trying to cut out processed foods and artificial flavors, Rice-a-Roni is no longer something I buy. I tried once before to make a homemade version, but it did not turn out well. But when I saw a recipe again, I decided it was time to try it again.

This recipe turned out delicious! I can not really compare it to Rice-a-Roni, since it has been so many years since I last had it. However I can tell you this homemade variety is really delicious and worth making.

Homemade Broccoli Au Gratin Rice-a-Roni

Ingredients:

  • 1 tablespoon olive oil
  • 1/2 cup brown rice
  • 1/2 cup orzo pasta
  • 2 cups low sodium vegetable broth
  • 2 tablespoons unsalted butter
  • 1 cup finely chopped broccoli
  • 1/2 cup shredded sharp cheddar cheese
  • 1/4 teaspoon ground black pepper

Directions:

  1. In a medium saucepan, heat the olive oil over medium heat.
  2. Add in the rice and orzo, stirring to coat. Cook stirring often until the orzo turns golden brown and the rice smells nutty, about 3-5 minutes.
  3. Add in the broth and bring to a boil.
  4. Turn the heat to low and cover the saucepan. Cook, covered, for 20-30 minutes or until most of the liquid has been absorbed.
  5. Add in the broccoli and cook for an additional 3 minutes.
  6. Remove the saucepan from the heat and add in the butter, cheese and pepper, stirring until well mixed
  7. Cover and let sit for 5 minutes.
Enjoy!!!

Notes:
White rice may be substituted for brown for a more "authentic" Rice-a-Roni flavor. Just cook the rice for 10-15 minutes, then follow recipe as written.
