Blueberry Banana Baked Oatmeal: Savory Sweet and Satisfying

I got on such a kick last summer with overnight oats, that I forgot about baked oatmeal and how delicious it can be. This version is a great way to use up those leftover bananas that are starting to get brown spots. It is also a great way to use up any leftover frozen blueberries. But you do not have to use just blueberries, any berry would work well.

Blueberry Banana Baked Oatmeal

Ingredients:

  • 2 cups old fashioned rolled oats
  • 1 teaspoon baking powder
  • 2 teaspoons ground cinnamon
  • 1/2 cup blueberries, fresh or frozen
  • 1 large banana, sliced
  • 1 egg
  • 1/3 cup maple syrup
  • 2 teaspoons vanilla extract
  • 2 cups milk

Directions:

  1. Preheat oven to 375º F. Grease an 8-inch square baking dish with cooking spray.
  2. In a large bowl, stir together the oats, baking soda, cinnamon. Transfer the mixture into the prepared baking dish and spread into an even layer.
  3. Evenly place the bananas and berries on top of the oats.
  4. In a medium bowl, whisk together the egg, maple syrup, vanilla extract and milk.
  5. Slowly pour the milk mixture over the oats.
  6. Bake for 30-35 minutes or until the top is golden brown.
