Baked Blueberry Fritter Bites: Savory Sweet and Satisfying

I can't say that I have ever had a fritter. But I was sure excited to try a baked version at home. I really enjoy making muffins or coffee cake for breakfast, but recently I wanted something sweet to go with a breakfast, but wasn't feeling muffins or coffee cake, I was looking for something different. That is when I came across this recipe. 

A fritter is typically fried for a crispy outside and soft inside. This baked version creates that same crispy outside and soft inside all in the oven. Definitely a delicious morning treat.

Baked Blueberry Fritter Bites

Ingredients:

  • 1 1/2 cups all purpose flour
  • 1/2 cup granulated sugar
  • 2 teaspoons baking powder
  • 6 tablespoons unsalted butter, melted and cooled slightly
  • 1 egg
  • 1 teaspoon vanilla extract
  • 2- 5.3 ounce containers blueberry yogurt
  • 1 cup blueberries, frozen or fresh
  • 2 cups powdered sugar
  • 1/3 cup milk

Directions:

  1. Preheat the oven to 350º F. Lightly spray 24 cup mini muffin tin with cooking spray.
  2. In a large bowl, whisk together the flour, sugar and baking powder.
  3. In a small bowl, whisk together the melted butter, egg, vanilla extract and yogurt.
  4. Add the yogurt mixture to the dry ingredients and stir until well combined.
  5. Fold in the blueberries.
  6. Divide the batter evenly between the muffins cups, filling each one almost to the top.
  7. Bake for 15 minutes or until they start to turn light brown on top.
  8. Remove the fritters from the oven and turn the broiler on high.
  9. Line a baking sheet with parchment paper or a silpat.
  10. Carefully remove the fritters from the muffin tin and place on the prepared baking sheet.
  11. In a small bowl, whisk together the powdered sugar and milk until smooth.
  12. Working with one fritter at a time, dip the tops into the glaze and set back on the baking sheet, allowing the glaze to drip down the sides of the fritter.
  13. Place the baking sheet in the oven under the broiler and until the tops start to get crispy on top and caramelize, about 3-4 minutes. Rotate the baking sheet every minute to make sure they caramelize evenly. Be sure to watch the fritters carefully because they can easily burn. Once the fritters start to turn brown in spots remove them from the oven.
  14. Brush the remaining glaze over the tops of the fritters and allow the glaze to set for 15 minutes before serving.
  15. Store the fritters in the refrigerator and reheat in the microwave for 15-20 seconds or bake at 350º F for 5-10 minutes.
