With a Costco size jar of Giardiniera peppers sitting in my fridge I have been looking for different ways to use them. Hummus and giardiniera peppers seemed liked a good fit.
I like my hummus on the spicy side so adding giardiniera peppers gave the hummus a good spicy kick. Plus the giardiniera peppers gave the hummus such a good flavor, besides just making it spicy.
Giardiniera Hummus
Ingredients:
- 1/4 cup tahini
- 1/4 cup lemon juice
- 2 cloves garlic
- 2 cups giardiniera peppers, drained
- 3 teaspoons giardiniera liquid
- 2- 15 ounce cans chickpeas, drained and rinsed
- 1/2 cup olive oil
Directions:
- In a food processor add the tahini and lemon juice. Mix well.
- Add in the garlic, giardiniera peppers, giardiniera liquid and a handful of chickpeas. Mix well.
- With the food processor running continue to add in handfuls of chickpeas mixing well after each handful.
- Again with the food processor still running add in the olive oil and mix well.
- Transfer the hummus to a airtight container and refrigerate overnight.
