Potato Salad Bake

Potato Salad Bake: Savory Sweet and Satisfying

Potato salad is a classic summer side dish, that my family really enjoys. But I have no desire to eat it during the cold months, it just does not appeal to me.


That is where this potato salad comes in. It takes all the goodness of the classic potato salad and bakes it in the oven for a deliciously warm and comforting side dish.


Potato Salad Bake

Ingredients:
  • 4 pounds russet potatoes, peeled and diced into 1 1/2 inch cubes
  • 6 slices bacon
  • 1 cup light miracle whip
  • 1/2 cup light sour cream
  • 3/4 cup milk
  • 1/4 cup finely diced dill pickles
  • 3 tablespoons dill pickle juice, from jar of pickles
  • 2 tablespoons dijon mustard
  • 1/2 teaspoon black pepper
  • 1 teaspoon celery seed
  • 1/2 cup diced yellow onion
  • 1 cup sliced pimiento stuffed green olives
  • 2 cups shredded cheddar cheese
Directions:
  1. Preheat the oven to 325º F. Spray a 9x13 inch baking dish with cooking spray.
  2. Place the cubed potatoes into a large pot and cover with cold water about 1 inch above the potatoes.
  3. Bring the water to a boil, over high heat.
  4. Reduce the heat to medium-low and simmer until the potatoes are fork tender, but not mushy, about 5-15 minutes. Drain the potatoes.
  5. While the potatoes are cooking, cook the bacon until crispy and set aside on a paper towel lined plate.
  6. In a large bowl stir together the miracle whip, sour cream, milk, pickles, pickle juice, mustard, black pepper and celery seed, until well combined.
  7. Once the potatoes are cooked and drained add them to the bowl along with the sliced olives. Fold everything together.
  8. Crumble the bacon into the bowl and add the cheese. Fold everything together and transfer the mixture to the prepared baking dish.
  9. Bake for 45-55 minutes or until bubbly.

Notes:
This recipe can be halved and baked in an 8 inch square baking dish.
