Pork chops are stuffed with cheese and spinach. Then they are coated in panko and baked until golden brown and crispy. A delicious way to enjoy pork chops.
Cheesy Spinach Stuffed Pork Chops
Ingredients:
- 2 ounces cream cheese
- 1/2 cup shredded mozzarella cheese
- 2 tablespoons shredded parmesan cheese
- black pepper, to taste
- 10 ounces frozen spinach, thawed and squeezed dry
- 1 cup all purpose flour
- 5 eggs
- 3 cups panko breadcrumbs
- 6 1 inch thick pork chops
Directions:
- Preheat the oven to 425º F. Place a wire rack on a baking sheet and spray with cooking spray.
- In a medium bowl, combine the cream cheese, mozzarella, parmesan, spinach and black pepper, stir until well mixed.
- Add the eggs to a shallow bowl and gently whisk.
- In another shallow bowl add the flour.
- In another shallow bowl add the panko.
- Cut a slit in one side of the pork chops, stopping just before you reach the bottom of the pork chop. You are creating a pocket for the filling.
- Stuff the pork chops with the cheese and spinach filling. Season both sides with black pepper.
- Working with one pork chop at a time, dip it in the flour, coating both sides. Then dip it in the egg, again coating both sides. Then place in the panko and coat both sides pressing down so the panko sticks.
- Dip the pork chop back in the egg, again coating both sides and then place back in the panko coating both sides and pressing down so the panko sticks.
- Place the pork chop on the prepared baking sheet.
- Lightly and carefully spray the tops of the pork chops with cooking spray.
- Bake the pork chops for 17-25 minutes or until panko is golden brown and pork chops are cooked through
