One Skillet Italian Chicken: Savory Sweet and Satisfying

This chicken was so super easy and ready in under 20 minutes. It is made all in one skillet where the chicken cooks in the sauce creating a deliciously flavorful thick tomato sauce.

One Skillet Italian Chicken

Ingredients:

  • 1/2 tablespoon olive oil
  • 2 boneless skinless chicken breasts, about 1 pound
  • 1/4 teaspoon black pepper
  • 3 cloves garlic, minced
  • 1 cup crushed tomatoes
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon red pepper flakes
  • 1 cup shredded mozzarella cheese
  • 1 tablespoon shredded parmesan cheese

Directions:

  1. Slice the chicken breasts in half horizontally creating 4 thin chicken breasts. Season both sides of the chicken breasts with black pepper.
  2. Heat the olive oil in a large skillet, over medium heat.
  3. Place the chicken breasts into the skillet and cook on both sides until completely cooked, about 4 minutes per side.
  4. Add in the garlic and sauté for about 1 minute stirring constantly.
  5. Stir in the crushed tomatoes, oregano and red pepper flakes.
  6. Bring the mixture to a simmer, it will take about 1-2 minutes.
  7. Sprinkle both cheeses on top of the chicken and cover the skillet with a lid.
  8. Reduce the heat to low and continue to cook until the cheese has melted, about 2-5 minutes.
