I received a box of pumpkin cornbread as a gift and was not sure about how it would taste. And my family was a little skeptical when I served it with dinner, but after one bite we all agreed it was fantastic.
It was so fantastic that I commented how I wanted to try and make it homemade, no box mix. My husband was less than thrilled with that comment and mentioned to the girls they better get ready to try a bunch of pumpkin cornbreads. I guess that is life with a food blogger and someone who likes to make things homemade.
Luckily my first attempt at pumpkin cornbread was a winner. I will admitted I looked at many recipes and read way too many comments. But it all paid off because this cornbread tasted just like the boxed one I had previously made.
Pumpkin Cornbread
Ingredients:
- 1 cup all purpose flour
- 1 tablespoon baking powder
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/2 cup brown sugar
- 1 cup cornmeal
- 2 eggs
- 1 cup pumpkin puree
- 1/4 cup canola oil
- 1 tablespoon honey
Directions:
- Preheat the oven to 400º F. Spray a 8x8 baking dish with coking spray.
- In a large bowl, whisk together the flour, baking powder, cinnamon, nutmeg, brown sugar and cornmeal.
- In another large bowl, whisk together the eggs, pumpkin puree, oil and honey until well combined.
- Add the dry ingredients to the wet ingredients and stir until well combined.
- Transfer the batter into the prepared baking dish and smooth out the top.
- Bake for 25-30 minutes or until an inserted toothpick comes out clean.
- Allow to cool for 15 minutes before cutting.
