Sausage, Egg and Cheese Stuffed Biscuit: Savory Sweet and Satisfying

I enjoy a good breakfast sandwich and have made several varieties of a them. This breakfast takes the concept of a sandwich, but stuffs the filling inside of a biscuit.

With this breakfast you can easily customize it to your tastes. You can switch out the sausage for cooked bacon and use your favorite flavor of cheese. Don't like dough from a can, make your own biscuit dough, that's what I did.

Sausage, Egg and Cheese Stuffed Biscuit

Ingredients:
  • 8 sausage patties
  • 6 eggs
  • 16.3 ounce can refrigerated buttermilk biscuit dough (8 count)
  • 8 slices cheddar cheese
  • 1/8 teaspoon black pepper
  • 1 tablespoons unsalted butter, melted
Directions:
  1. In a small bowl, whisk together the eggs and black pepper.
  2. Preheat a non-stick skillet over medium heat. Add in the sausage patties and cook according to package directions. Remove the sausage patties from the skillet and set aside.
  3. Leave about 1 tablespoon of grease in the skillet and reduce the heat to medium-low. Add in the eggs and cook, stirring gently, until just about set. Remove the skillet from the heat.
  4. Preheat the oven to 350º F. Line a baking sheet with parchment paper or a silpat.
  5. On a lightly floured surface, flatten and stretch each biscuit until it is about 5-6 inches wide.
  6. On a biscuit, place 1 piece of cheese, 1 sausage patty and about 2 tablespoons of the scrambled eggs.
  7. Carefully pull of the sides of the dough and pinch together on top of the filling, completely covering the filling.
  8. Place the biscuit seam side down on the prepared baking sheet. Repeat until all of the biscuits are done.
  9. Brush the tops of the biscuits with the melted butter.
  10. Bake for 15-20 minutes, rotating the baking sheet halfway through the cooking time.
  11. When the biscuits are done the tops and bottoms will be golden brown.
  12. Allow the biscuits to cool for at least 10 minutes before serving.

Notes:
If you do not want to cook the eggs in sausage grease, use 1 tablespoon of butter instead. If your sausage did not produce enough grease, add a bit of butter to equal about 1 tablespoon.
