One Skillet Andouille Sausage Pasta
Ingredients
- 1 tablespoon olive oil
- 2 cloves garlic
- 1 yellow onion, diced
- 1 package smoked andouille sausage, about 12 ounces
- 2 cups low sodium chicken broth
- 14.5 ounces low sodium diced tomatoes
- 1/2 cup milk
- 8 ounces elbow pasta
- ground black pepper, to taste
- 1 cup shredded pepper jack cheese
Directions:
- In a large skillet over medium high heat, heat the oil. Thinly slice the sausage and add to the hot skillet. Add in the garlic and onions as well. Cook, stirring frequently, until the sausage is lightly browned, about 3-4 minutes.
- Add in the chicken broth, tomatoes, milk and pasta, stirring to combine. Season with black pepper and bring the mixture to a boil. Once the mixture comes to a boil cover, reduce the heat and simmer until the pasta is tender and cooked through, about 12-14 minutes.
- Remove the skillet from the heat and top with the cheese. Cover the skillet until the cheese has melted.
