Here is another snack bite that is easy and delicious. I love having a collection of healthier snacks that I can rely on to make for my family that I know they will love.
Cranberry Almond Bites
Ingredients:
- 1 cup old fashioned oats
- 1/3 cup almonds, finely chopped
- 1/2 cup dried cranberries
- 2 tablespoons shredded coconut
- 6 tablespoons peanut butter
- 1/4 cup honey
- 1/2 teaspoon almond extract
Directions:
- In a large bowl combine the oats, almonds, cranberries and shredded coconut.
- In a small microwave safe bowl add the peanut butter and honey. Microwave for about 15-30 seconds, until warm and slightly runny. Add in the almond extract and stir to mix.
- Pour the wet ingredients into the dry ingredients and stir until well combined.
- Lightly wet your hands and then use a 1 tablespoon measure to scoop out the mixture and roll into a ball. Place the balls in a resealable container and rewet your hands as needed. Store the bites in the refrigerator.
