Cranberry Almond Bites

Cranberry Almond Bites: Savory Sweet and Satisfying

Here is another snack bite that is easy and delicious. I love having a collection of healthier snacks that I can rely on to make for my family that I know they will love.

Cranberry Almond Bites

Ingredients:

  • 1 cup old fashioned oats
  • 1/3 cup almonds, finely chopped
  • 1/2 cup dried cranberries
  • 2 tablespoons shredded coconut
  • 6 tablespoons peanut butter
  • 1/4 cup honey
  • 1/2 teaspoon almond extract

Directions:

  1. In a large bowl combine the oats, almonds, cranberries and shredded coconut.
  2. In a small microwave safe bowl add the peanut butter and honey. Microwave for about 15-30 seconds, until warm and slightly runny. Add in the almond extract and stir to mix.
  3. Pour the wet ingredients into the dry ingredients and stir until well combined.
  4. Lightly wet your hands and then use a 1 tablespoon measure to scoop out the mixture and roll into a ball. Place the balls in a resealable container and rewet your hands as needed. Store the bites in the refrigerator.
