Peanut Butter Chunky Monkey Baked Oatmeal: Savory Sweet and Satisfying

Most times it is the simple things in life that make me happy. For example when I was meal planning and looked at this recipe I realized I had everything I needed to make it. The only thing I would need was a perfectly ripe banana for the top and that is even optional, I just really felt like adding the banana on top with the drizzles.

I know it may sound weird, but finding a recipe where I do not need to buy a lot of ingredients makes me happy. Less ingredients needed to buy means smaller grocery list which means less time in the grocery store and that all makes me happy.

Hopefully you do not need to buy too many ingredients to make this delicious and hearty breakfast.

Peanut Butter Chunky Monkey Baked Oatmeal

Ingredients:

  • 2 over ripe bananas
  • 1/2 cup peanut butter
  • 2 eggs, lightly beaten
  • 1 1/2 cups milk
  • 2 teaspoons vanilla extract
  • 2 teaspoons ground cinnamon
  • 3/4 teaspoon baking soda
  • 2 1/2 cups old fashioned oats
  • 1/4 cup dark chocolate chips
  • Optional Toppings

  • melted peanut butter
  • melted dark chocolate chips
  • banana slices

Directions:

  1. Preheat the oven to 375º F. Spray a 8x8 baking dish with cooking spray.
  2. In a large bowl mash the bananas, leaving some chunks. Add in the peanut butter and eggs. Stir to mix. Add in the milk and vanilla and stir to mix well.
  3. In another bowl combine the cinnamon, baking soda and oats. Add this mixture to the wet mixture and stir to combine. Add in the chocolate chips and stir to combine. Transfer the mixture to the baking dish.
  4. Bake for 30-35 minutes or until an inserted toothpick comes out clean. Serve and top each piece with sliced bananas, a drizzle of melted peanut butter and melted chocolate, if desired.
