I really wish I had some more of this mix right now. Just looking at this picture makes me hungry for it. The salty and sweet pretzels, the crunchy Chex cereal coated in chocolate and powdered sugar, plus the delicious toffee and subtle coffee flavor. Such an easy and very delicious snack.
Chocolate Coffee Toffee Chex Mix
Ingredients:
- 4 cups Chocolate Chex cereal
- 2 cups Cinnamon Chex cereal
- 1 cup bite size pretzel twists
- 1/2 cup toffee bits
- 1 tablespoon espresso powder
- 1 teaspoon hot water
- 1 cup semisweet chocolate chips
- 1/4 cup unsalted butter
- 1 cup powdered sugar
Directions:
- In a large container with a lid, combine the both cereals and pretzels. Sprinkle the toffee bits on top of the cereal.
- In a small microwavable bowl, stir together the espresso powder and hot water. Add in the chocolate chips and butter. Microwave on high for 1 minute and then stir. Microwave in 30 second increments stirring after each time, until chocolate and butter is melted and mixture is smooth. Make sure to stir well before heating again to avoid the chocolate seizing up.
- Pour the chocolate mixture over the cereal and stir well until everything is evenly coated in chocolate. Add the powdered sugar and seal the container. Gently shake the container until everything is well coated in powdered sugar.
- Store in an airtight container.
