Pineapple topping is an important one for making banana splits. I have never looked in a store to see if you could buy pineapple ice cream topping, but it doesn't matter, I rather make it myself. This recipe is super easy and super delicious.
Homemade Pineapple Ice Cream Topping
Ingredients:
- 2 cups finely chopped fresh pineapple
- 1/4 cup lemon juice
- 2 tablespoons brown sugar
- pinch ground cinnamon
Directions:
- In a medium saucepan, combine the pineapple, lemon juice, brown sugar and cinnamon.
- Heat the mixture over medium high heat. Cook stirring occasionally, until the sugar has dissolved and the juice is reduced, about 5-10 minutes.
- Set aside to cool to room temperature before using.
- Store leftover in an airtight container in the refrigerator. Leftovers will last about 1-2 weeks.
