In about 30 minutes from start to finish you can have this delicious meal on the table. Plus it contains a vegetable making it a complete meal. I would love to be able to say it is a one pot meal, but you do need one pot to cook the pasta and one for the rest of the dish. However, two pots and 30 minutes is not bad for a delicious meal that includes the vegetable.
Ingredients:
- 12 ounces bow tie pasta
- 10 slices turkey bacon
- 6 tablespoons unsalted butter
- 1 cup diced yellow onion
- 2- 14 ounce cans stewed tomatoes
- 1 tablespoon minced garlic
- 1 tablespoon dried oregano
- 1 1/2 cups tomato juice
- 2/3 cups evaporated milk
- 1/2 cup chopped fresh basil
- 1 teaspoons crushed red pepper
- 1 cup cooked and crumbled sausage
- 2 cups frozen peas
- 1 cup Italian blend shredded cheese
- Cook the pasta according to the package directions and drain.
- In a large skillet cook the bacon until crispy and place on a paper towel to drain. Crumble when cooled.
- Add the butter to the skillet and melt. Once melted add in the onions and cook for 2-3 minutes or until they start to soften.
- Add in the tomatoes, garlic, oregano, tomato juice, milk, basil and red pepper. Bring to a simmer and cook for about 10 minutes.
- Add the bacon, sausage, pasta and peas to the skillet and stir to mix.
- Top with the cheese and cover the skillet until the cheese melts and everything is warmed through.
