Fresh potatoes, smoked sausage and lots of cheese come together in 30 minutes to create a delicious skillet meal. Making it perfect for a night when you do not have a lot of time to cook or do not want to spend a lot of time in the kitchen.
Cheesy Potato and Smoked Sausage Skillet
Ingredients:
- 1 pound russet potatoes
- 1 cup diced onion
- 1 cup diced green pepper
- 3 tablespoons unsalted butter, divided
- 1 tablespoon olive oil
- 12 ounces smoked sausage, cut into slices
- 16 ounces shredded sharp cheddar cheese
- 1/8 teaspoon white pepper
- 1/8 teaspoon dry mustard
Directions:
- Rinse the potatoes and dice them into 1 inch pieces.
- Place the potatoes into a bowl and cover with cold water. Set aside while you chop the onion and green pepper.
- In a large skillet add in two tablespoons butter and olive oil. Heat over medium high heat until the butter is melted.
- Drain the potatoes and add to the skillet. Add in the onions. Cover the skillet and cook for 5 minutes.
- While the potatoes cook, place the half and half, cheddar cheese, pepper and mustard into a medium saucepan. Heat over low stirring often until the cheese melts and the mixture is smooth and combined.
- Add the remaining 1 tablespoon of butter to the skillet with the potatoes and onions.
- Add in the green peppers and cook flipping the mixture with a spatula for about 8 minutes or until the vegetables and potatoes are tender.
- Add in the smoked sausage, cover the skillet and reduce the heat to medium. Cook covered for 2 minutes.
- Remove from the heat and add in the cheese sauce, stirring to coat everything.
