When it comes to the liquid in this dish you can use all whipping cream or you can use half whipping cream and half milk or even half and half. It all depends on how creamy you want it and the amount of calories you are willing to consume. Any combination of milk, heavy cream, or half and half would work, but I wouldn't use fat free milk as it would not be as creamy.
Cajun Chicken Pasta
Ingredients
- 16 ounces linguine
- 4 boneless skinless chicken breasts
- 4 teaspoons Cajun seasoning
- 4 tablespoon unsalted butter
- 1 cup heavy whipping cream
- 1 cup half and half
- 1/4 cup chopped sun dried tomatoes
- 1/2 teaspoon dried basil
- 1/4 teaspoon black pepper
- 2 garlic cloves, minced
- 1/2 cup grated Parmesan cheese
Cooking Directions
- Cook the pasta according to the package directions and drain.
- Meanwhile, cut the chicken breasts into bite sized pieces. Coat the chicken with the Cajun seasoning.
- In a large skillet, over medium heat, melt the butter.
- Cook the chicken in the butter until completely cooked, about 5-7 minutes.
- Reduce the heat to low and pour in the heavy cream, half and half, tomatoes, basil, black pepper and garlic. Bring to a boil, reduce the heat to low and continue to cook on low, stirring occasionally until everything is heated through and sauce thickens.
- Add the pasta and stir to coat.
- Sprinkle with Parmesan cheese and mix.
