In this dish I decided to take my family's love of tater tot casserole and add some Mexican flavors to it. It turned out delicious. Even my husband who is not a fan of beans, let alone the traditional taco enjoyed this casserole.
Taco Tater Tot Casserole
Ingredients:
- 1 pound ground turkey
- 1 small yellow onion, diced
- 1 clove garlic, finely diced
- 1 package taco seasoning
- 4 ounces diced green chilies
- 16 ounces frozen con
- 12 ounces low sodium black beans, drained and rinsed
- 2.25 ounces sliced black olives
- 16 ounces shredded Mexican cheese
- 10.5 ounces red enchilada sauce
- 32 ounces frozen tater tots
- 1 green onion, chopped
Directions:
- Preheat oven to 375º F.
- In a large skillet, over medium heat, cook the ground turkey, onion and garlic until turkey is completely cooked and onions are softened.
- Add in the taco seasoning, green chilies, frozen corn and black beans. Stir and heat until everything is warm.
- Remove from the heat and stir in the black olives and 3/4 of the shredded cheese.
- Pour 1/3 of the enchilada sauce into the bottom of a 9x13 baking dish. Spoon in the meat mixture. Pour the remaining enchilada sauce on top. Top with the frozen tater tots.
- Bake for 40 minutes.
- Top with remaining cheese and green onions and bake for an additional 2-3 minutes or until the cheese is melted.

I used my Homemade Taco Seasoning and Homemade Enchilada Sauce in this recipe.
