I was trying to figure out what to say about this sandwich, but everything that came to mind sounded very similar to something I said about other jalapeño popper inspired recipes. Then I got to wondering just how many jalapeño popper inspired recipes I have on my site. So I decided to count them and it turns out I have 11 and if you add this one then it makes 12. Yup, I really love the flavor combination of jalapeño poppers and this recipe is just another delicious one to add to the list.
Jalapeño Popper Grilled Cheese
Ingredients:
- 8 large jalapeños
- 8 slices texas toast
- 8 ounces reduced fat cream cheese, softened
- 2 cups shredded monterey jack cheese
- 6 slices turkey bacon, cooked
Directions:
- Turn the oven on to broil.
- Place the jalapeños on a baking sheet covered with foil. Broil the jalapeños for about 3 minutes, or until charred, then turn them over and char the other side.
- Once the jalapeños are charred on all sides remove them and place them in a sealable bag or sealed container and let them sit for about 15 minutes.
- Remove the skin from the jalapeños, then cut in half and remove the stem and seeds.
- In a large bowl combine the cream cheese and shredded cheese until well combined.
- Divided the mixture evenly between all 8 slices of bread and spread to cover the bread.
- Divide the bacon evenly between 4 slices of bread and divided the jalapeños evenly between 4 slices of bread and place on the bacon. Top with remaining slices of bread.
- Cook the sandwiches on a griddle or in a skillet until both sides of the sandwich are crispy and browned to your liking.
