Jalapeño Popper Grilled Cheese: Savory Sweet and Satisfying

I was trying to figure out what to say about this sandwich, but everything that came to mind sounded very similar to something I said about other jalapeño popper inspired recipes. Then I got to wondering just how many jalapeño popper inspired recipes I have on my site. So I decided to count them and it turns out I have 11 and if you add this one then it makes 12. Yup, I really love the flavor combination of jalapeño poppers and this recipe is just another delicious one to add to the list.

Jalapeño Popper Grilled Cheese: Savory Sweet and Satisfying

Jalapeño Popper Grilled Cheese

Ingredients:

  • 8 large jalapeños
  • 8 slices texas toast
  • 8 ounces reduced fat cream cheese, softened
  • 2 cups shredded monterey jack cheese
  • 6 slices turkey bacon, cooked

Directions:

  1. Turn the oven on to broil.
  2. Place the jalapeños on a baking sheet covered with foil. Broil the jalapeños for about 3 minutes, or until charred, then turn them over and char the other side.
  3. Once the jalapeños are charred on all sides remove them and place them in a sealable bag or sealed container and let them sit for about 15 minutes.
  4. Remove the skin from the jalapeños, then cut in half and remove the stem and seeds.
  5. In a large bowl combine the cream cheese and shredded cheese until well combined.
  6. Divided the mixture evenly between all 8 slices of bread and spread to cover the bread.
  7. Divide the bacon evenly between 4 slices of bread and divided the jalapeños evenly between 4 slices of bread and place on the bacon. Top with remaining slices of bread.
  8. Cook the sandwiches on a griddle or in a skillet until both sides of the sandwich are crispy and browned to your liking.
