There is no denying I love eating cheese dips, but I also love making cheese dips. Not only do they taste better than store bought dips, but they cost less and are probably slightly better for you. With a little bit of work you can have a delicious, creamy and slightly spicy cheese dip to enjoy.
Chipotle Cheese Queso
Ingredients:
- 1 tablespoon unsalted butter
- 2 jalapeños, seeded and diced
- 2 chipotle peppers in adobo sauce, diced
- 1 1/2 cups half and half
- 1 tablespoon cornstarch
- 4 ounces cream cheese, cut into cubes and softened
- 2 teaspoons yellow mustard
- 12 ounces sharp cheddar cheese
Directions:
- In a medium pot, over medium heat, melt the butter.
- Add in the diced jalapeños and cook, stirring occasionally for 3-4 minutes or until softened.
- Add in the half and half and chipotle peppers, stir to mix.
- Whisk in the cornstarch and bring the mixture to a simmer.
- Reduce heat to medium low and add in the cream cheese and mustard, stirring until cheese is melted.
- Slowly add in the cheddar cheese, stirring until melted and mixture is smooth.
Notes:
You can replace the half and half with equal amounts of evaporated milk. If you replace the half and half, you will not need to let the evaporated milk come to a simmer. Just skip this step and continue with the rest of the ingredients.
