Another delicious pasta dish to add to my ever growing collection. I really think I could eat pasta everyday. It is just so good, especially when it is spicy like this dish. A whole head of roasted garlic, tomatoes, chipotle peppers all mix in with pasta, makes for a yummy and spicy dish.
Roasted Garlic Pasta with Adobo Cream Sauce
Ingredients:
- 3 1/2 cups rotini pasta
- 1 head garlic
- 2 teaspoons olive oil
- 2 cups milk
- 2 tablespoons all purpose flour
- 2 chipotle peppers in adobo sauce, finely diced
- 15 ounces no salt added diced tomatoes
- 1/2 teaspoon black pepper
Directions:
- Preheat oven to 400º F.
- Peel the outer layers of the garlic head, making sure to leave the individual skins on the cloves and keeping the garlic head together.
- Cut 1/4-1/2 inch off of the top of the garlic head, exposing the individual cloves of garlic.
- Place the garlic head on a piece of aluminum foil and drizzle with olive oil. Wrap the aluminum foil around the garlic head completely covering it.
- Place the garlic head in the oven and roast for 35-40 minutes.
- Remove garlic from the oven and allow to cool to the touch.
- Unwrap garlic and squeeze out the cloves into a small bowl and mash with a fork. Set aside.
- Cook pasta according to package directions and drain, reserving 1/2 cup pasta water.
- In a large pot, over medium high heat, add in the milk and bring it to a simmer.
- Whisk in the flour and continue whisking for 2-3 minutes or until the milk thickens.
- Stir in the chipotle peppers, diced tomatoes and mashed roasted garlic. Whisk everything together and let simmer for 5 minutes.
- Season with black pepper. If the sauce is too thick add a bit of reserved pasta water until desired consistency is reached.
- Remove the sauce from the heat and add in the cooked and drained pasta. Stir to combine.
