This breakfast is meant for a special occasion, like a birthday breakfast for someone who loves angel food cake and strawberries. It may not be the healthiest breakfast, but it sure is delicious and a great way to celebrate a special day.
Angel French Toast with Strawberry Syrup
Ingredients:
- 3 cups diced strawberries
- 1 cup granulated sugar
- 2 tablespoons lemon juice
- 1/2 teaspoon vanilla extract
- 1 angel food cake
- 4 eggs, whisked
- 3/4 cup milk
- 2 teaspoons vanilla extract
- 1/2 teaspoon cinnamon
- pinch of nutmeg
- reduced fat cream cheese, softened
Directions:
- In a medium saucepan, over medium heat, combine the strawberries, sugar, lemon juice and vanilla.
- Bring the mixture to a boil and then reduce heat to low.
- Simmer until the strawberries are softened, the syrup has thickened and the volume has reduced by 1/3 to 1/2, stirring occasionally. This will take about 15 minutes. The syrup will thicken more upon standing, if it becomes too thick whisk in a bit more water to reach desired consistency.
- Preheat a griddle and spray with cooking spray.
- While the strawberry syrup is simmering, slice the angel food cake into 12-14 pieces.
- In a shallow bowl whisk together the eggs, milk, vanilla, cinnamon and nutmeg.
- Place the angel food cake pieces into the egg mixture letting it stand for a few seconds on each side.
- Place cake pieces on griddle and cook until golden brown, about 2-3 minutes. Flip and cook on the other side until golden brown, about 2-3 minutes.
- Spread each piece of angel food cake with desired amount of cream cheese and top with strawberry syrup.
