Barbecue Ranch Chicken Casserole: Savory Sweet and Satisfying

The combination of barbecue sauce and ranch dressing is not one I would have ever thought of. So thankfully some else did, because it is a delicious combination. Add in some pasta, chicken, corn and of course cheese and you have a complete and comforting meal.

Barbecue Ranch Chicken Casserole

Ingredients

  • 8 ounces rotini pasta
  • 1 pound boneless skinless chicken breasts
  • black pepper, to taste
  • 3 Roma tomatoes, diced
  • 1/3 cup diced red onion
  • 1 cup frozen corn
  • 1 1/2 cups light ranch dressing
  • 3/4 cup barbecue sauce
  • 2 1/2 cups shredded Monterey Jack cheese, divided

Cooking Directions

  1. Cook pasta according to package directions until just al dente. Drain and set aside.
  2. Season chicken with black pepper and cook desired way until completely cooked. Let cool a little bit and then cut into bite sized pieces.
  3. Preheat oven to 350º F and lightly grease a 9x13 baking dish.
  4. In a large bowl, combine the diced tomatoes, diced onion, frozen corn, cooked pasta and chopped chicken until well mixed.
  5. In a small bowl whisk together the ranch dressing and barbecue sauce until well mixed. Add this mixture to the large bowl and stir to mix everything well.
  6. Add 1 1/2 cups cheese to the large bowl and mix well.
  7. Transfer mixture to the prepared baking dish and spread into an even layer. Sprinkle remaining 1 cup cheese over the top.
  8. Bake for 15-20 minutes or until everything is hot and cheese is melted.
